If he actually left a will (and I'm not seeing one on the Archive catalogue where it should be) then the best thing to do would be to apply to the Jersey Archive for a copy, www.jerseyheritage.org
It will cost you £5 and you will have to sign a copyright declaration, it is also more than likely to be in French.
