Having a quick look at the census I am presuming she was a stall holder.
My family were stall holders in Dublin.
I have records of the rents that they had to pay on their stall to the Council.
Those that I have were what we kept ourselves and are from the 1960's to 1980's.
Now, I know my family were 'dealers' going back to the 1870's at least.
What paperwork was kept going that far back I've no idea.
Mine dealt in fruit and veg and could be more transient so you wouldn't always have paperwork, yet if you had a stall you had to pay rates so there WAS paperwork.
Being a fowl dealer would be stationary, and given it's nature, there would have been sanitary requirements etc.
I would suggest that you contact the local Council offices and see were any of these records maintained.
