Thomas Hurst and Mary Devlin Hurst originated from Roscrea, Co. Tipperary, Ireland.

Thomas was born in May of 1856, Mary was born in 1954. The couple was married on May 27, 1882 in the Roscrea RC Church

Three of their children were born in Ireland prior to their immigration to New Jersey:
Patrick James Hurst (May 13, 1883)
Mary Ellen Hurst (July 22, 1884)
Thomas Hurst, Jr. (1886)

Thomas Hurst immigrated to Elizabeth, New Jersey in 1887.  Separately, Mary (age 30) arrived in New York aboard the SS Servia with her two sons - Patrick (or Pat), age 4 and Thomas Jr., age 1.

Their daughter, Mary Ellen Hurst (age eight), would later travel to the United States on the SS Britannic with her maternal grandfather Peter Devlin (age 60) and first cousin John Devlin (age 11) arriving on June 29, 1894.

In the United States the couple had a few more children:
Peter Hurst (March, 1888)
Anna or Annie Hurst (September 9, 1891)
William "Willie" Joseph Hurst (June 20, 1893)
Catherine Josephine Hurst (May 27, 1897)

I have been able to locate the time and death and burial locations of all of the above individuals except for Thomas Hurst, Jr. and Mary Ellen Hurst.

Thomas Hurst - father - (1856-1914) - died in New Jersey and buried at Mt. Olivet Cemetery in Newark, NJ.
Mary Devlin Hurst - mother - (1854 - 1931) - died in New Jersey and buried at Mt. Olivet Cemetery.
Patrick James Hurst - son - (1883-1970) - died in New Jersey and buried at Mt. Olivet Cemetery.
Peter Hurst - Son - (1888-1891) - died in New Jersey and buried at Mt. Olivet Cemetery.
Anna or Annie T. Hurst - (1891-1964) - died in New Jersey and buried at Mt. Olivet Cemetery.
William "Willie" Joseph Hurst - (1893-1978) died in Florida and buried at Rosedale Cemetery, Linden, NJ.
Catherine Josephine Hurst - (1897-1991) died in New Jersey and buried at Mt. Olivet Cemetery.

I have created findagrave postings for all of these individuals.

Mary Ellen Hurst appears in the 1895 New Jersey State Census with her family in Elizabeth, New Jersey.  She next appears in the 1900 US Census living in Elizabeth, New Jersey.  She is listed as 15 years of age.  That is the last I can find Mary Ellen Hurst in any records.

Thomas Hurst, Jr. appears on the ship manifest in 1887 (age 1) but is not present in the 1895 New Jersey State Census or the 1900 US Census.  My assumption is that he died sometime in this eight year window.

Sorry for being so long winded but I wanted to put out as much information as I could to help narrow any particular searches. Any help or suggestions in tracking down these two remaining children would be most welcomed.

Thank you!

If all else fails, there are some soon-to-be-online indexes that may help - https://www.reclaimtherecords.org/records-request/5/

I wonder if this is Mary Ellen:

On the SS Applications and Claims Index for daughter Dora her maiden name is given as Mary E HURST.

But as I was multi-tasking - taking a telephone call at the time - our MaureeninNY sneaked in ahead of me  ;)
