I am unable to find Peter Henry, Harriet and Elizabeth Truan.
In 1851 Peter and Harriet  are  living with their  parents Peter and Eliza  and siblings at Gerrans and in 1861 Elizabeth is there but Peter and Harriet have disappeared.
There is a thread about this family ( Peter TRUAN/TRUEN/TRURAN ) and the family has various spellings of the surname.
I have information about the rest of the siblings and just want to know what happened to these three.

Elizabeth is still with her parents in 1871 RG10/2274 folio 14 pg 7, she's still with widowed mother Eliza in 1881 RG11/2307 folio 17 pg 15 & has gained a middle initial of C, possible for her in 1891 in Truro workhouse as 32 year old Elizabeth Truran born Gerrans RG12/1829 folio 185 pg 3.
Possible in 1911

I think that you are right about Elizabeth,osprey.
Elizabeth is in the workhouse in 1901 as well and it seems that she has a daughter named Eliza who was born in Truro.
I checked Cornwall OPC and there is a baptism at St Paul, Truro for Eliza Truan 20th July 1890 with mother Elizabeth Truan and a burial for Elizabeth Truran age 77, address 1 St Clemnet Vean, Truro.
Now I can add Eliza to the list of names  ::)
Looking for information about the workhouse I wonder if this is the place now and if so are the residents aware of the history of the place.

there's another possible daughter in Truro workhouse in 1891, Edith aged 5 born Manchester. In 1901 Edith is in St Faith's House of Mercy in the parish of St Winnow aged 16 - RG13/2197 folio 21 pg 11. Possible birth reg Edith Mary Truan june qtr 1884 Prestwich vol 8d pg 411

I noticed Edith in that census but dismissed it but maybe I shouldn't have.
Added:The Royal Cornwall Gazette 01 May 1890 and the Cornishman 08 May 1890 on Findmypast has uncomfortable reading about a child named Edith Truran of St Just and I wonder if she is the Edith in the census. Her mother was in the workhouse with another illegitimate child.
Added again!! Unfortunately I think that this is the correct family. Another report at findmypast Royal Cornwall Gazette 08 May 1890. Edith was living with her Uncle George Frederick Truran and her Aunt Eliza. The Elizabeth that I am looking for had a brother called George Frederick and his wife was Eliza nee Robins and I have them living in Ohio in the 1900 census.
Too much of a coincidence?

there is also this death reg which may eplain why Edith is not on 1911 census -poor girl
