Help finding J Lemon on census

I am having a problem locating a Jesse Lemon in the 81, 91 and 01 Census.  He is born Redhill Surrey 1878.  I can find him in the 1911 Census and 1939 Register (Hampshire).  He also marries in 1903 in Hampshire to a Surrey born girl, Minnie Boxall (b 1882) - not got marriage cert yet.  (I can't find her on any thing but the 1911 census and 1939 register either.)

But I can't work out where he would be for three consequtive census.  Could anybody with a more developed sense of lateral thing be able to help on this please.

The 1881 Jessie (Jesse) is down as being female. I think that's an error.

Baptism for Minnie Boxall 26 Aug 1883 born 7 Aug Headley All saints Parents John and Esther. (Found in Surrey Baptisms although the baptism page heading states in the County of Southampton). Headley is very near to the Surrey border.

1901 census she seems to be a servant for Revd Frederic G Eyres in Alton, Hampshire.
