Definitely a "d "in the middle of the word. David was a Bachelor of the Marine Artillery.
I wonder if Mary was the Mary West born in 1798 so she would have been 20 or 21.

Given the burial in 1852 and the census of 1851 is consistent with a YoB 1801 and place - Plympton St Mary there is this baptism

Mary West bpt 16 Feb. 1801 daughter of William and Johannah

I now think her name was transcribed as Mary Wesh, a widow of this parish Charles, married David Parfitt on 5/12/1819.

I found a John Welch married a Mary Sulivan in East Stonehouse 16/11/1817.

A John Welch died age 32  buried on 10/5/1818 in East Stonehouse.

This ties in nicely with a name sounding like Wesh and Mary a young widow, but I haven't found a Mary Sulivan born abt 1800, although there are two possibilities for 1795 and 1796.

David Parfitt was in the Royal Marines from 1804 and in the Royal Marine Artillery from at least 1819 to 1825. The 1st battalion Royal Marine Artillery formed at Plymouth on 29 November 1810 under the command of Major Richard Williams.  No children were born to David and Mary 1821-1826. Was he away at sea/war? Please, how can I find out if he was aboard ship e.g. in America and Europe?

Hi Roger

It's a bit late now here, but I will check my son's University database ( Military ) and see what I can find for you.

Unless someone beats me to it  ;D ;D

His pension says Royal Marine Artillery under the ship column in FindMyPast.

FindMyPast has helped me, and I now think you are right about Mary West being single. The writing by J Babb on the marriage record is not good, and the word after Mary Wesh/West is more likely spinster and not widow, but the writing is unusual for him. The Mary West  of Plympton bapt 16 Feb 1801, with father William and mother Johanna Tall, is now the best bet. The record about James Parfitt at Greenwhich hospital seems to confirm it.  I have made a new post about this. Many thanks for your help and ideas.
