There's a tree on Ancestry that suggests that Mary and Eliza were half sisters - perhaps the marriage was then considered invalid by them, hence them returning to their previous marital states on 1861, but as I can;t find a marriage to Mr Brown, maybe she decided she wasn't sure if she was legally free to marry?

There's one obvious candidate for Joseph, who was b c1814 and dies in 1863. However on the probate register and in 1861 he is listed as a widower.

Joseph Comber Knight is described as Married in 1861

Joseph Knight is with Mary and son Caleb

1851
HO107 1526 21

1851HO107 1642 73 1
Mary Knight age 35 Police Constable's wife and her children Naomi 9,Edward C 2 and Arthur C 1 are visiting her husbands parents and his siblings-Joseph Knight age 55, Louisa 49, Lydia 21and Robert Knight

1851 in Lindfield 2 of Mary Knight (nee Batchelor)'s children Emma age 7 and John age 3 are with their Batchelor Grandparents and aunts and uncles - Edward Batchelor wife Lucy and children Edward, William,Thomas, ELIZA (age 21 dressmaker) and Charles

1861 Joseph Comber Knight is 47 married with children John C 15, Arthur Comber11 and Joseph 7

I can't find Eliza in 1861??

I'd seen an Eliza Batchelor in Brighton in 1861 who I thought was her, but 1851 suggests its not, sorry
