Making an assumption

George Monks Owen was born March 1857 in Droylsden Manchester.  His mother was Ellen (or Elin Owen)

He was illegitimate and no father is listed on his birth certificate.

Have always assumed that his father was one George Monks. (The names George and Monk(s) do not appear in Ellen's family.)

Is it reasonable to make this assumption?

It sounds possible.

One of my illegitimate ancestors was given his father's names as his first names.

Do you have any other information to corroborate - father on marriage info, etc.

Have you done any research on George Monks?  Did he have any other descendants?  It might be worth you doing a DNA test to see if any possible descendants show up as matches.

Have been unable to find any information about - all that I know is that there was a guy called George Monks in Manchester in 1856/57.

DNA would be a good way to go unless you find evidence of him making payments for upkeep or Ellen's lying-in costs.

You could look at this guy on Family Search.

George Monks bapt. 3 Feb 1828 at Wigan son of Thomas and Jane.  See if he married and had any descendants.  Wigan is not too far from Manchester. Also the industry in Manchester in the 1800 attracted people from all over so you could cast you net further as well.
