Somewhere in between 1891 and 1901 Harrywas adopted by the Hick family, are there any adoption records for this time? 

I know there is a baptism fora Harry Spoors in 1893 Hunslet mother was Sarah Spoors.

No formal adoption until 1927. Did you look for the Hicks in 1891?

Albert Hick married Ellen Smith, Mar qtr 1888 Leeds.

Although Ellen seems to have brought a daughter (Sarah Ellen Smith) into the marriage, I can’t see any children born to the Hicks as a couple.  They may have arranged the adoptions (in the pre-statutory sense) privately, or through an e.g. a workhouse or religious organisation.

Harry’s 1893 baptism is interesting, because he was baptised together with another child from the same home address:
