MATHEWS William & Sarah in Woodbridge mid 1800's

My great, great grandparents, William and Sarah MATHEWS managed a pub in New St Woodbridge in the mid 1800's. I would appreciate any help I can get to trace several of their children.
Jane b 1823, Robert b 1830, Mary Ann b 1835 and Henry Edward b 1842.
I have found through ancestry information about William Thomas b 1826 and Caroline b 1837.
I am related through William Thomas who somehow made his way to Australia.

On the 1841 census there appear to be William 30 & Jane 25 and 10 children age 0 - 15

However by 1851 only William 58 & Sarah 53 + Children Jane 28, Mary A 16, Caroline 14 & Henry 8.

So is it just the 4 above plus Robert you are interested in?

On the GRO index
Matilda Margaret Mathews registered Woodbridge 1841 mother maiden name Pache.
I think this should be Peache, however this was her previous married name unless she was
Sarah Peache married ? Peache before 1822

Sarah died 1856 age 58 registered at Woodbridge.

Thank you to ColC, rosie99 and amondg for your prompt response to my message.
I have only found Robert and Thomas on the 1841 Census and nothing more, they have vanished.
Henry and Jane don't appear after the 1851 Census.
I would very much like to know what happened to them.
The other family members  have appeared on other family trees so I have been able to move forward with them.
