Yonkers did have horse racing in that era, so maybe someone got confused about the location in retelling the story - https://en.wikipedia.org/wiki/Yonkers_Raceway_%26_Empire_City_Casino

There are some Hickeys, including a Simon, on the naturalization index in Westchester Co. - https://archives.westchestergov.com/browse-all-online-indexes-main/naturalizations-index

The 1905 New York state census has Anna McCormack, daughter Mary McCormack, and brother Simon Hicky at 258 New Main, Yonkers, but I don't see Simon the father.  The census date was June 1st, so maybe Simon had died before then.

There is a New York state death index online, but unfortunately Yonkers was one of a few cities in NY to hold its own vital records until 1914.  If the death occurred in Yonkers, it wouldn't be on that index.  There is a Simon Hickey who died in 1906 in Lima on that index, but it looks like he was a different guy.

Letters of administration for the estate of Simon Hickey were given to Thomas Hickey in Oct. 1912 - http://www.rootschat.com/links/01oyr/

There are various entries in the Supreme Court calendar from 1903-1904 for a case entitled Hickey vs. Yonkers R.R., such as this one - http://www.rootschat.com/links/01oys/  Not sure if it's one of your Hickeys or not.

This article about the younger Simon's death says his body was taken to the home of his sister-in-law Mrs. Patrick Hickey at 14 Centre Street, Yonkers, where he lived.  http://www.rootschat.com/links/01oyt/

This is amazing!

I remember my cousins told me that a son and his father had been hit by cars or trains. So this definitely lines up with what I have been told!

I am SO grateful and in awe that so many of you would take time out of your days to help me. I am truly humbled. Thank you so very much!
