Researching Sawkill/ Dempsey family Newcastle 1881 census

I'm researching the Sawkill/ Dempsey family in Newcastle, who appear on the 1881 census and something has me puzzled.  Matthew Sawkill is down on the 1881 census as 'head of the family.
He is with his wife Sarah, and three grandchildren,  Sarah, William and Abraham Dempsey. I have Abraham's birth certificate which lists his father as William Dempsey and his mother as Mary Dempsey, formerly Robertson.   I can't find Mary and William anywhere, and if Mary's maiden name was Robertson, where does the Sawkills come into it?  I'm very new to genealogy, so please be gentle with me!

Maybe this is William born about 1847, however Sarah was born about 1831 on 1881 census.

But I still can't see where Matthew Sawkill, the Grandfather is in  relation to the other family members named.

I think your next step might be to purchase the 1863 marriage register entry from either Tyne and Wear Archives or Northumberland Archives.  I think RootsChatter Boo, might advise the latter as the cheapest option - I think they might send you a copy by email for £5 since you now know the exact venue and date - St Nicholas, 31 March 1863.  This might give you more clues about Matthew's background, such as who Father may have been or even if there was a known Father.  Once you have this, perhaps there might be more clues to work on.
