I have an ancestor born in Shillelagh in 1875. Where would the nearest Catholic parish church be?

probably Tomacork-Carnew but worth checking the adjacent parishes also. Given the date involved it's also worth checking civil birth records, the registration district for this area is named after the town of Shillelagh

St Mary's RC Church, as the crow flies 3.5 km SSE of Shillelagh, in the townland of Deerpark.

Do you mean in Shillelagh the poor law Unior/Superintendant Registrar's District? Or do you mean the village?
If the former, then many Catholic parishes. You need to specify exactly where the child was born, not just the Union.
