Hopefully this helps - here's what I have for Michael and Sarah.

Baltimore Sun posting about Michael's death. Lists Down as his native county.

Records c.1803 are less likely to exist so baptisms of children stands best chance of establishing a more exact location and the right family as will be other McCoys of similar age. Roman Catholic or Protestant?
R.C. are indexed online on Ancestry (sub) and Findmypast (better options & free). Some Protestant ones on RootsIreland (sub needed).

A couple called Michael and Sarah McCoy (maiden name unknown) had a daughter Elizabeth (born 30 November 1836) baptised in Seapatrick Church of Ireland on 4 December 1836, their address was given as Banbridge and Michael's occupation was recorded as carpenter.  A couple with the same names had a son James (born 16 June 1839) baptised in the same church on 14 July 1839, their address was given as Ballyvalley and again, Michael's occupation was recorded as carpenter.

Seapatrick Church of Ireland register transcripts are on RootsIreland https://rootsireland.ie/down/online-sources.php on daily or monthly sub, seems better value than alternative pay per view from https://www.ancestryireland.com/search-irish-genealogy-databases/genealogical-sources/bdm-sources-list-county-down/ which is same company.

Seapatrick Church of Ireland. Baptisms 1800 - 1903. Marriages 1804 - 1925.

That's good info.

Would you happen to have a copy of the baptism records for these events that you could send me?

Update: Sarah may have been born closer to 1817. Her headstone says she was 43 when she died in 1860.
