Assuming that James Hamon is the person you are looking for I can offer you 2 possibilities. There are probably others as Hamon is quite a common name.
1. 18 April 1848 in the parish of St John, son of Philippe Hamon and Rachel Bisson
2. 26 Aug 1849 (James Peter) also in St John, son of Jean Hamon and Jane de Gruchy

James Peter may have married Ann Le Brocq in St Helier in 1877.

Where does Huntingdonshire fit in?

I think Huntingdonshire Jersey is a mistake.  Perhaps it's Huntingdonshire, but not Jersey.  Yes, I'm finding out that it is a common name and it's very confusing!!

Think I've found Thomas snr's certificate from 1854 which lists his service record. Born 2 December 1815. Went to sea as an apprentice in 1826.

In the vital period of the 1840s he's on ships plying their trade out of Newfoundland, central and south America

He gives an address at 19 Mercer Court, Red Cross Street, but where that is I'm not sure. He's asked for his certificate to be sent to Liverpool

This sounds possible.  But I think my GGF came to America in 1849 with his Mom and Dad, Thomas Hamon and Caroline Cooper.  At least, this makes the most sense at the moment as I can't find any other records of a James Hamon immigrating in those years.

I was more thinking about where James  might have been born. He's not baptised in Jersey, and other children of Thomas and Caroline were (Thomas Henry was even baptised on a return visit to Jersey from the USA). I was wondering if the family were travelling on ships with Thomas, especially given he was a ship's master by then and James was born at sea or somewhere along the East coast of the American continent where his father was plying his trade

Yes, James Alphus Hamon born 3 Aug 1883 is their first child.  He was born in San Francisco I am fairly certain but don't have certificate.  I do not have James Sr. marriage certificate.
