John Bott was born in 1848 in Fulford, Staffordshire, his father, Jeremiah, was 31 and his mother, Charlotte, was 22. He married Margaret Williams on 14 September 1874 in Longton, Staffordshire. They had three children during their marriage

If they married in 1874 she would be Margaret Bott - not Margaret Williams.  Are you sure you have the right 1881 entry?

GRO online shows only 2 children - Sydney 1874 & William Thomas 1877

If John was b 1848 &  Margaret 1837 - she was 11yrs older than him?

The marriage has them both the same age - born 1848 per the transcription.

I see a Margaret Williams widow with 3 Williams children in 1881 but it could be she and John simply split up and she reverted to her maiden name? 

Any sign of John Bott in 1881 or afterwards?

Where is John in 1851 & 1871.  1861 b Stone - 13yr old servant.  No 1851 with parents Jeremiah & Charlotte.

What was his occupation on the marriage cert or childrens birth certs?  If a mariner - he may have died at sea

The one with birthplace Stone 1848 seems to have a wife Alice in 1881/1891 so is this a different chap

John Bott and Alice Bott marriage in Sep 1880 Stone.

What occupation does the husband of Margaret have do we know?

The 1851 entry posted by John is correct but somebody has notified an amendment back in 2015 saying the surname is BALL hence problem finding the entry.  There should be an Emma b 1846 per GRO online
