I have a lot of teachers in my family trees. Is there some register that allows you to follow the teaching career of your relatives?

No with the exception of https://www.nationalarchives.ie/article/list-of-teachers-employed-by-the-commissioners-of-national-education-on-31-march-1905/

"This list was compiled by the National Education Office in 1905 ‘showing the ages and length of service of National School Teachers in the service of the Commissioners of National Education on 31st March, 1905 and, where furnished, their places of education’. No further lists of this kind were created."

Thank you I found one Great Uncle on the register!
My Great Grand father was a Mathematical professor at Trinity Dublin Alexander Earls DOWDS. Any suggestions where I could find anything about his career?

University Lecturers /professors, grammar and catholic school teachers were not employed by Boards of Education, so will need to look appropriately. Being a local figure they are likely to get occasional mention in regional newspapers.

Those are more commonly used to find the National School attendance registers for pupils and then order and view the registers in PRONI. For the few ones I have consulted in Lurgan and Belfast their teacher was not recorded on the pages. There may be inspectors reports and cash books for some and I see a Lurgan School has "Book entitled School Reports, which gives inspectors' comments on teachers, and overall school performance" but they don't track a teacher's career.

Teachers Salary Books PRONI Ref ED/7.
"If you want to find out who taught in particular schools you should consult the Salary books kept by the National Education Board and continued by the Northern Ireland Ministry of Education. The volumes held in PRONI only date from 1899 and are incomplete up to 1905 but thereafter run continuously up to 1927. The pre-1899 volumes and the missing ones between 1899-1905 are in the National Archives of Ireland in Dublin. These salary books will give the names of the teachers, their academic qualifications and their date of appointment and resignation in addition to particulars of their salaries. Salary Books can be found under the PRONI Ref ED/7" They are not online.

Irish Independent, 20 August 1940:
MR. A.E. DOWDS
Mr. Alexander E. Dowds, 37 Belmont Ave., Dublin, whose death occurred at Kilkee, was formerly a master at St. Andrew's College, Dublin, retiring about four years ago.  A native of Armagh, he was educated at the old Santry School and later at T.C.D.  He was one of the original masters at St. Andrew's when it started in 1894.  He was father of Capt. A. Dowds, Principal, Irish Nautical College, Dublin.
