1841 Census - there's a William Jones, age 35, Bridge Street - is the occupation "Baker" ?

Yes, I saw that too. There seem to be three Bridge Streets in Bristol at that time (or perhaps there is some spanning of boundaries) – is there any way to know which is which?

A long article in The Bristol Mercury of December 22 1855 describes a fire in St Augustine's Parade. This is my summary with a few quotations.

"Terrible and Destructive Fire"
A fire broke out on the premises of Mr Warry, jeweller and watchmaker. Mr Warry escaped, his housekeeper, Mary Brown, fell while trying to escape from an upper window and later died from her injuries. The occupants of the adjoining properties –Mr Jones, confectioner, and Mr Linter, haberdasher– were rescued. A strong wind fanned the flames and the fire spread to Mr Jones' house. At 3 a.m. the whole of the front of Mr Jones' property collapsed and "fell into the road, pitching fire-escape, men and all into the street and burying them under the ruins."

A summary of the outcome is given as: "Mr Warry's premises were reduced to a heap of smouldering ruins, Mr Jones's were destroyed excepting a part of the shop, and Mr Linter's and those lately occupied by Mr Stockham, gas-fitter, were considerably damaged."

W B Jones rebuilt the property and reopened for business (4 October 1856: Bristol Mercury) but went bankrupt shortly afterwards (17 January 1857: Bristol Mercury)

Their Bridge St is in the parish of St Nicholas

Pigots Directory 1822 for Bristol has two bakers named Jones:

Robert Jones, 36 Broad Mead
Thomas Jones, 5 St Augustine’s-back [this name used in the 1841 census]

There are no Bristol confectioners named Jones.

Could this be them? Only a few years before he died, he might not be baking.

According to the marriage record she was Mary Brown DAW. They married by license with consent of parents.

A baptism in 1820, St Augustine the Less:
Mary Ann Jones, Thos Jones and Mary, St Augustines Place, baker
Boyd, Dove, Blakey, Burdon

Thank you all for this information I will go through it all

Robert Jones who died in 1848 married second time to his sister in-law about 1845 his brother was her first husband William Jones he died in 1844. On William Jones death he left everything to her.
