who is the mother of Ellen Swift nee Blundell of Halsall

Tracing back my Swift ancestry in Halsall, I come to a marriage dated 21st February 1860:
James Swift, full age, bachelor, blacksmith, Halsall, father William Swift, wheelwright
and
Ellen Blundell, full age, spinster, - , Halsall, father John Blundell, wheelwright

1861 census finds them on New Street, Halsall -
James aged 32 (b. c1829)
Ellen aged 29 (b. c1832)

Searching for Ellen Blundell in 1851 finds her aged 19 on New Street, Halsall, with her father, John Blundell aged 52 a wheelwright

In 1841 at New Street, Halsall I find Ellen aged 10 and her father John aged 40

I've speculated that Ellen Blundell was baptised 10 July 1831 at Halsall to wheelwright John Blundell & his wife Elizabeth

I don't know the surname of Ellen's mother Elizabeth, as there is no marriage that stands out to be the correct one. I thought it was Elizabeth Rylance who married John Blundell in 1827 in Halsall, but have been contacted by a descendant of this branch to say it's not the same Elizabeth. She married John Blundell (1804-1878) https://www.findagrave.com/memorial/264870878/john-blundell a wheelwright of Halsall, both living in Maghull in 1871.

My John Blundell (1798-1864) a wheelwright of Halsall did not remarry, after his wife (I speculate) Elizabeth Blundell was buried in Halsall on 23rd May 1834 aged 35 years.

Given the information on Ellen's marriage certificate, I would think you are right in thinking the baptism on 10 Jul 1831 is the right one (John is stated as a wheelwright) - so Ellen's mother is Elizabeth.
Apart from a descendant saying that the Elizabeth Rylance marriage is not right, have you any other evidence. I see that there are children born pre 1827 with John Blundell on the censuses. Have you checked their baptism records, to see if they have a different mother? In case John was previously married. The marriage records at the time in Halsall only give a groom's occupation not his marital status, so he might have been a widower.

Just seen a second John Blundell, a bit younger than yours with wife Elizabeth - joiner in 1851, but looks like wheelwright (poor image ) in 1841.

 I have found a burial for Elizabeth Blundell in Halsall in 1834 age as 35 date May 3rd.

   First child Mary in 1822 has mother as Betty.

There is marriage between a John Blundell and Elizabeth Hughes on 4 Jan 1822 at Edge Hill
It is in Lancs and if near the present Edge Hill University only about 5 miles from Halsall

It looks like the 2 John Blundells were buried 6 days apart in 1864 !

And there's another John Blundell baptised in Halsall a year after the one I think is yours (if yours has parents William and Mary, which seems likely given names of children) The other one has parent John and Ellen (bapt 1799) and looks like he is an inn keeper in Ormskirk in 1861. He may be the other one buried in Halsall in 1864 as his residence is Ormskirk. He has an unmarried sister as housekeeper in 1861.

That Mary is the daughter of John Blundell (Malster) and Betty Dickinson. Their marriage records John as a Malster aged 24 in 1803 marriage bond.

They were having children from 1806-1822, most baptisms record John as a Malster including Mary 1822.
