David Henderson married Elizabeth Cook in 1862 in Edinburgh St Andrew.

Go to www.scotlandspeople.gov.uk, invest in a few credits and use some of them to view and download a copy of the marriage certificate. It will tell you the names of their parents, including their mothers' maiden surnames.

You'll still have enough credits to find their death certificates (assuming they died in Scotland of course). Go for her first because she should be indexed as both Cook and Henderson. Her death certificate will tell you whether he died before her, which will narrow down the search for his death.
Never trust anything you find online (especially submitted trees and transcriptions on Ancestry, MyHeritage, FindMyPast and other commercial web sites) unless it's an image of an original document - and even then be wary because errors can and do occur.

Have you found daughter and wife on 1891 census?
How old were they in 1881 ?

I have Lanarkshire  records where wife used maiden name after marriage .

If the couple had separated the daughter may also be under surname COOK

It's worth checking .

He is not on the 1881 or 1891 census with his wife.  Did you check the actual 1881/1891  image to see if she is recorded as a widow

Possible birth for him on SP 10.8.1834 Greenock parents John Henderson & Catherine Rodger but you still need to confirm that from the marriage cert

Is she still shown as married in 1891 - trying to narrow the possible death date

There is an English 1881 entry for a David Henderson b Scotland aged 45 - boot clicker/maker.  He is a lodger in London but is shown as a widower so not a probable candidate

Census takers do make mistakes. Or Mr Henderson would prefer to call himself a widow than be known to have abandoned wife and child .

Original post says he was on 1881 census
Carole reply 3
says "not with his wife" 😔 which is it ?

Have you traced wife's death

There were journey men shoemakers who travelled around mending shoes so he could have been away .
Tho a clicker sounds like a more specific job .
