Just to let you know I have received the birth certificate of Sarah Jane SALTER.

Birth Date - 2nd of Jan 1844
Birth Location - Holbeach Union House
Registered Name - Sarah Jane SALTER
Fathers Name - Charles BEDFORD
Fathers Occupation - Labourer
Mothers name - Sarah SALTER no maiden name mentioned.

So what do you all think?

Have you looked to see if there's a Charles KNIGHT and Charles BEDFORD on the 1841 census?

I see from 1851 census  HO107; Piece: 2097; Folio: 337; Page: 24
Charles KNIGHT age 28 (1823) born S(L)utton
wife Sarah children Matilda, James & Thomas,
his occupation is an Ag. Labourer.

Not sure if this is the same Charles KNIGHT 1841 living Holbeach

Added - next door to Charles & Sarah KNIGHT is widowed Elizabeth KNIGHT age 69 Wigloft? Lincs - she died age 84 Burial 10 Apr 1866 Burial Lutton

The 1845 marriage Charles KNIGHT to Sarah SALTER gives his occupation as Labourer

Only Charles I could find around the same age as Sarah that could be the culprit!
