Looking for my great grandmother's birth

I've been looking for my great grandmother's birth (on and off - another brick wall that I keep coming back to) for some time now. She married a Walter Thomas Penney in 1880 at St Mary's Newington, Surrey. Her name on the marriage certificate is Caroline Ercy Webb and her father's name is William Webb. On the 1881 Census it shows her birthplace as being what looks like Limehouse, Middlesex. I have searched the parish records on Ancestry and the only 'Carolines' I could find were  Caroline Hurst Webb and Caroline Rush (Ruth?) Webb which aren't her. As always, any help and advice to find her birth record will be gratefully received.

1881 & 1891 give approx year of birth as 1859. 

1881 bn Limehouse, 1891 bn Clerkenwell.

Marriage states father is deceased, no occupation given for him. 

In 1901 4 of younger children are with William Henry Walker and his wife Agnes Louisa, have you tracked this couple back to see if they are related.

What is her name on your grandparent's birth certificate? Is her middle name Erey not Ercy?

Was her last child Ada Louisa Penney mmn Webb, Dec qtr 1901 Southwark, and what became of them after that?  Has Caroline's death been identified?

Thank you all for all the research leads you've given me. Yes her last child was Ada Louisa Penney. Caroline died in Launceston, Cornwall in 1941 age 82 in Pages Cross House which used to be a workhouse. Her death was registered by the 'occupier'. One of my half uncles told me that she had left her husband Walter Thomas Penney but didn't have anything further to tell me about her. I'm not sure why she ended up in Cornwall though except one of her grandsons lived in Redruth.

OK so if she survived to 1941 do you have her exact birthdate from the 1939 Register?

Has she been found in 1911?

Have you looked to see who she is living with on the 1939 register  ???
