Regarding never having heard of Phyllis.  Maybe she went by a nickname or middle name . That often happens .

It helps other researcher if you give ALL the details that you know at the start . You might think you know little but a remembered fact about professions or locations could help
Even knowing which religion they were . Could lead to finding baptisms

Elizabeth Thomas was still alive in 1911. Age 67.
With her son Benjamin in Hackney

Could this be Joseph in 1861 living at 1 Fairey Street, Hackney

Elizabeth   Green   Widow   58   occ   Laundress   bn Witney, Oxfordshire
Joseph   Green   Grandson   7   Scholar   bn West Hackney, Middlesex
Harriet   Thomas   Granddaughter   3   Scholar   bn West Hackney, Middlesex, England
RG09/154 f20 p33

Just add in 1871 for George and Elizabeth Thomas.
They have a son Joseph, 17. And a daughter Harriet, age 13.

Thank you for the birth details

Have you looked for William & Joseph on 1939 register?

Can’t post details of 1939 register. It appears that William J Chapman b1853 (same dob) is living in Hampstead. He should also be on 1921 census.

Is this his death entry?

Could my Elizabeth Green have been married before and not disclosed it ? Thanks ☺️

Elizabeth was probably unmarried when she had Joseph and William.  Joseph may have died as an infant.
